Vanilla Bean Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 vanilla bean
- 6 egg yolks
Instructions:
- Combine cream, milk and sugar in a medium saucepan and heat over medium heat until mixture begins to steam, stirring occasionally.
- Split vanilla bean in half lengthwise and scrape the seeds into the cream mixture. Drop the pod in as well. Stir to combine.
- In a separate bowl, whisk egg yolks until light and frothy. Slowly pour the hot cream mixture into the egg yolks, whisking constantly to prevent the eggs from curdling.
- Pour the mixture back into the saucepan and heat over medium heat, stirring constantly with a wooden spoon, until the mixture thickens and coats the back of the spoon. This should take around 5-7 minutes.
- Remove from heat and pour mixture into a large bowl or container. Let cool, then refrigerate for at least 2 hours, or overnight.
- Once mixture is chilled, remove vanilla bean pod and pour mixture into your ice cream maker. Churn according to manufacturer instructions.
- Transfer ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
